Kale and broccoli salad

You need (for 2 large portions):

– 1 fresh stalk of broccoli
– 2-3 fresh kale leaves
– 2 ripe avocados
– 2 hard-boiled eggs
– 2 cloves of garlic
– Parmesan (shaved or whole)
– 2 slices of white bread or ready-made croutons
– Butter, olive oil, red wine vinegar, mustard
– Salt, pepper

Here's how:

1. Wash the broccoli and break or cut into very small florets
2. Wash the kale leaves and tear them into very small pieces; omit the ribs.
3. Dice the avocado flesh and the hard-boiled eggs.
4. Carefully mix all ingredients together
5. Mix the dressing together by combining crushed or finely chopped garlic, 1-2 teaspoons of mustard, about 3 tablespoons of vinegar, and 9 tablespoons of olive oil. The salad needs quite a bit of dressing and will taste too dry if it doesn't get enough.
6. Fold in the dressing, sprinkle with shaved Parmesan and croutons, or toast the bread and spread with butter. Serve with a hearty bratwurst or steak.
